Ingredients:

For the Chicken Marinade:

– 500 g chicken breast, cut into cubes

– 200 g yogurt (plain)

– 3 tablespoons lemon juice

– 3 tablespoons vegetable oil

– 3 teaspoons Shakti foods chicken tikka masala

– 2 teaspoons cumin powder

– 1 teaspoon coriander powder

– 1 teaspoon Kashmiri chili powder

– 1 teaspoon turmeric powder

– Salt to taste

For the Masala Sauce:

– 2 tablespoons vegetable oil or ghee

– 1 large onion, finely chopped

– 3 garlic cloves, minced

– 2-inch piece of ginger, grated

– 1 can (400 g) chopped tomatoes

– 1 tablespoon tomato paste

– 1 teaspoon Shakti foods chicken tikka masala

– 1 teaspoon cumin powder

– 1 teaspoon coriander powder

– 1 teaspoon paprika powder

– 1 teaspoon sugar (optional)

– 200 ml cream (or coconut milk for a lighter option )

– Fresh coriander (cilantro), chopped for garnish

– Salt to taste

Instructions:

Step 1: Marinate the Chicken

1. In a bowl, combine the yogurt, lemon juice, and oil. Add all the spices: chicken tikka masala, cumin, coriander, paprika, turmeric, chili powder, and salt.

2. Add the chicken pieces and coat them well. Cover and marinate for at least 3 hour (or overnight in the fridge for best results).

Step 2: Cook the Chicken

1. Preheat your oven to 200°C (400°F).

2. Place the marinated chicken on a baking tray. Bake for about 20 to 25 minutes, or until cooked through and slightly charred. Alternatively, you can grill or pan-fry the chicken until cooked.

Step 3: Prepare the Sauce

1. In a large pan, heat the oil or ghee over medium heat. Add the chopped onions and saute until golden brown.

2. Add the minced garlic and grated ginger. Cook for 1-2 minutes until fragrant.

3. Stir in the chopped tomatoes and tomato paste. Cook for about 6 – 8 minutes until the mixture thickens.

4. Add the spices ( chicken tikka masala, cumin, coriander, paprika) and sugar (if using). Cook for another 2-3 minutes.

5. Pour in the cream (or coconut milk) and stir well. Let it simmer for about 4-6 minutes.

Step 4: Combine Chicken and Sauce

1. Add the cooked chicken to the sauce, stirring to coat well. Let it simmer for 7 to 10 minutes to combine the Flavors.

2. Taste and adjust salt and spices as needed.
